Tipical Food

FISH MAITO

If you visit the Ecuadorian Amazon, you should try the delicious traditional food such as maito. This is a typical food prepared with tilapia, a kip of fish. the maito is a Quechua word meaning involved, this preparation comes from ancient Caribbean cuisine, where a lot of preparations are wrapped in local leaves.

People often eat this dish served with cassava, banana cooked, onion and tomato sauce, can be found in restaurants, in cities, in towns or villages in the Ecuadorian jungle.
There are a variety of Maitos these dishes are made of flesh, paca, agouti and fish, these dishes consist of these meats wrapped in sheets or bijao platanillo (similar to banana leaf) then place it on the stove.

People who visit the Ecuadorian Amazon really like to try the chicha chonta is a drink used by indigenous rituals and festivals, chonta involves cooking, peel, remove the seeds and grind in the mills (special wooden bowl) then ground with the aid of heavy stones.
